Gluten Free Banana Waffles

These delicious waffles will become a staple in your household. They freeze well and great to grab and go.

Equipment

  • 1 stand mixer
  • 1 mixing bowl
  • 1 waffle iron

Ingredients
  

Dry Ingredients

  • ½ Cup Bob’s Red Mill Cup for Cup Gluten Free Flour
  • ¼ Cup Fine ground almond flour
  • ½ teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • 1 Tablespoon Sugar
  • ½ teaspoon Cinnamon
  • Dash Nutmeg
  • Dash Salt
  • 1 Scoop Meyenberg Goat Milk Powder

Wet Ingredients

  • 1 egg
  • 1 Banana
  • 1 ½ Tablespoons Coconut or Olive Oil
  • ¼ Cup water

Instructions
 

  • Mix dry ingredients together - gluten free flour, almond flour, baking powder, baking soda, sugar, cinnamon, nutmeg, salt and goat milk powder. Stir to blend.
  • In a separate bowl, mix wet ingredients together - egg, banana, oil and water.
  • Slowly add the dry ingredients to the wet, and stir to combine. Set aside.
  • Heat up waffle iron.
  • Once the iron is ready, pour batter and cook. Once the waffles are ready, remove and cool on rack.
  • Serve and enjoy!

Notes

Substitutions: you can substitute 1/4 cup of milk in place of the goat milk powder and 1/4 cup water.
Optional add-ons: 1/2 teaspoon ground flaxseed, 1/2 teaspoon nutritional yeast
